Red Velvet Cake

Try this wonderful dessert recipe when you’re having company.

Ingredients:

1 white cake mix
2 cups milk
2 eggs
1 box chocolate pudding, instant
2 oz. of red food coloring
1/4 cup vegetable oil
1 Tbls vinegar
1 tsp soda

Combine the first six ingredients and mix well. Add soda to vinegar; once soda is dissolved, add vinegar mixture to batter and mix well. Bake in 2-8″ greased and floured pans @ 375 degrees for 30 minutes, or until a toothpick inserted in the center comes out clean.

Let the cakes cool for five minutes before removing from pans. To remove cakes from the pans, run a knife along the edge of the pan. Place a cooling rack over the pan. Hold the pan and rack firmly and flip the pan over; tap gently on the counter to separate the cake from the pan. Cool completely before you frost the cake. You may have to trim the cakes so they are flat on top prior to putting layers together. Run a long knife through each cake.

Frosting:

1/2 cup milk
1/2 cup cream
5 tablespoons all-purpose flour
2 sticks (1 cup) real butter
1 cup granulated sugar
1 teaspoon vanilla extract

Combine milk, cream and flour in a small pan and cook over low heat, stirring constantly, until mixture begins to thicken. Cool completely; then cream butter, sugar and vanilla until light and fluffy. Stir cooled milk mixture into butter mixture and beat until icing reaches spreading consistency.
