No Roll Cherry Pie

If you thought you couldn’t make a pie, think again. Here is a simple and delicious cherry pie recipe with a prep time of about 10 – 15 minutes . Whenever I make it for guests, they always ask for the recipe.

Preheat the oven to 350 degrees.

Crust Ingredients:

1 stick real butter
3 – 4 Tbls. sugar
1 cup flour

Melt butter, then add sugar and flour. Mix to dough consistency. Using your hands, press dough into the bottom and sides of a greased 9″ pie plate.

Filling:

Pour 1 large can of cherry pie filling onto the unbaked crust or make filling from scratch.

Topping Ingredients:
1 egg
1/4 cup milk
1/4 cup flour
1/2 cup sugar

Mix topping ingredients together until well blended, then pour over the cherry pie filling. Bake at 350 degrees for 50-60 minutes. Delicious!

Note: Other canned pie fillings can be used in place of the cherry pie filling as long as they are similar in consistency to cherry pie filling.

Cherry fact: Sour cherries are higher in Vitamin A than sweet cherries.

Cherry Souffle

Ingredients:
1/4 cup cold water
1 Tblsp unflavored gelatin
3 eggs, separated
2 Tblsp lemon juice
2/3 cup sugar
1/4 tsp salt
1 can cherries, drained
1/2 cup heavy cream, whipped

Sprinkle gelatin into cold water to soften, about 5 minutes. Beat egg yolks, then add lemon juice, sugar and salt. Heat in microwave until mixture thickens, stirring often with whisk. Add gelatin to cooked mixture and stir until dissolved. Fold drained cherries in carefully. Let cool. When mixture starts to get firm, fold in whipped cream and stiffly beaten egg whites. Pour into a pretty mold and chill until firm. When ready to serve, unmold and garnish with fresh fruit that has been washed and well drained.

Cherry Muffins

Ingredients:

2 cups flour, sifted
4 tsp baking powder
1/2 tsp salt
1/4 cup granulated sugar
1 egg
1/4 cup shortening
1 cup milk
2/3 cup well drained cherries, chopped

Combine flour , baking powder, salt and sugar until well mixed. In a separate bowl, beat egg, then add shortening (that has been melted),milk and chopped cherries; mix well. Combine the dry ingredients with egg mixture, stirring until flour is dampened. Don’t over mix. Spoon into greased muffin tins, about 2/3 full. Bake in preheated 400 degree oven for 25 minutes. Test with toothpick in the center. It should come out clean. Yield: One dozen.
