Snicker Surprise Pie

If you’re looking for decadence in a pie, this is it. Every layer seems better than the one before as you savor every scrumptious bite. This recipe can be filed in the gourmet cakes and pies category in your recipe file.

Ingredients:

1/2 cup real butter (no substitutions)
1/2 cup light brown sugar, packed
2 eggs
1 tsp vanilla
3/4 cup flour
1/2 tsp baking powder
1/2 cup semi-sweet chocolate chips
1 Tbls cocoa powder
12 snack-size Snickers bars or equivalent, unwrapped
1 cup butterscotch chips

Melt butter and brown sugar together until it begins to boil. Set it side to cool for 10-15 minutes, then add 1 egg and the vanilla, stir well. Combine flour and baking powder until blended then add to the batter and stir until well blended.

Spray a 9″ pie plate with non-stick coating. Pile 2/3 cup of batter into pie plate and set mixture into a freezer for about 10-12 minutes until it is firm.

To the remaining batter add 1/2 cup of melted chocolate chips, 1 egg and cocoa powder. Stir until blended.

Remove chilled batter from the freezer, once it is firm, and press batter evenly on the bottom and sides of the pie plate. Place snack-size candy bars on crust and top with remaining batter.

Bake at 350 degrees for 20-25 minutes or until done.* Melt the butterscotch chips, pour on top of pie and spread like frosting over the entire top of the pie. Cool completely before serving. Yield:Ā  12 servings

* To test , insert a toothpick into center of pie. It should come out with moist crumbs on it when done.
