Super Moist Chocolate Chip Cookies

Mmmmmmm! This melt-in-your-mouth cookie recipe will melt your heart.

Ingredients:
1 pkg. SuperMoist yellow cake mix
1/2 cup butter, softened
1 tsp. vanilla
2 eggs
1 6oz. pkg. semisweet chocolate chips
1/2 cup chopped nuts

Preheat oven to 350 degrees. Mix half of the cake mix, butter, vanilla and eggs in a large bowl until smooth. Stir remaining cake mix, chocolate chips and nuts into first mixture. Drop dough by teaspoonfuls two inches apart onto an ungreased cookie sheet. Bake 10 – 12 minutes, (centers will be soft). Cool slightly, then remove from the cookie sheet. Yield: 5 dozen cookies.

Chocolate Mint Cookies

Nothing is more refreshing than a cookie recipe with a touch of mint?

Ingredients:
2 1/2 cups flour
1/2 tsp. salt
2 tsp. baking powder
1/2 cup shortening, creamed
1 cup sugar
1 egg
2 oz. baking chocolate
1/4 cup evaporated milk
Peppermint Patties

Combine flour, salt & baking powder until well mixed; set aside. Add sugar to the creamed shortening and mix well. Stir egg into shortening mixture, then melt baking chocolate and stir it into creamed mixture until well mixed. Add milk and dry ingredients alternately until well blended, then form into a roll about 1 1/2- 2 inches in diameter and chill for several hours or overnight. Prior to baking, cut into thin slices and bake on a greased cookie sheet at 400 degrees for about 12 minutes. Place a Peppermint Pattie between two cooled cookies.

Butterscotch Bar Cookies

This cookie recipe is lip-smacking delicious!

Ingredients:
1 cup sugar
2 eggs
3/4 cup butter
3 cups graham cracker crumbs
2 1/2 cups small marshmallows
1 cup flaked coconut
1/2 cup chopped nuts
12 oz. butterscotch chips
6 Tblsp. peanut butter

Combine sugar, eggs and butter. Boil on low heat until thick, stirring constantly, then set aside to cool. In a large bowl, combine 3 cups of fine graham cracker crumbs with marshmallows, coconut and nuts. Combine with the cooled butter mixture and press into a 9″ x 13″ cake pan. Melt butterscotch chips and peanut butter together, then pour over all.

Colorful Cookies

Here’s an easy cookie recipe that is as tasty as it is colorful.

Ingredients:

1/2 cup brown sugar, packed
1/2 cup shortening
1/4 cup granulated sugar
1 tsp vanilla extract
1 egg
1 1/8 cup flour
1/2 tsp salt
1/2 tsp baking soda
3/4 cup M&M’s candy

Cream shortening and sugars together. Add vanilla extract and egg, beat well. Sift flour, salt and baking soda together then add to egg mixture. Mix well. Stir in 1/4 cup of M&M’s, then drop mixture from a spoon onto ungreased baking sheet. Decorate with the remaining M&M’s, then bake at 375 degrees until lightly browned, about 10 minutes. Cool on wire racks. Yield: 3 dozen cookies.
