The Hubbard Squash is kind of ugly and warty-looking and has a hard skin that can’t be eaten, but its grainy, moist, orange-yellow flesh packs great flavor.

To prepare Hubbard Squash, peel and cube it, saute it in olive oil with diced onions and minced garlic until softened. Roast in an oven-proof dish for 40 minutes in a 350 degree oven until tender. Season to taste.

Why Its Healthy
Besides containing vitamins A and C, this squash is loaded with potassium, which can control blood pressure.

One reason: “They contain fiber, which produces by-products that may reduce damage to your arteries and help prevent hypertension,” says study co-author Eric Rimm, ScD. “Fiber-rich whole foods are better than supplements because they contain several nutrients. The effect is synergistic: While fiber may be the nutrient most beneficial to blood pressure,” Rimm says, “its effect is enhanced by a food’s antioxidants, vitamins and minerals, most notably potassium.”

If you’ve ever consumed raw beet juice you’ve probably discovered that it can irritate your throat and esophagus. However, you can combine the beet juice with other ingredients for a smooth and healthy beverage. If you’re using organic beet roots or greens, wash them thoroughly. If you have non-organic beets in your garden, spray or soak them with a biodegradable wash and then rinse them well.

A diet rich in blueberries may banish belly fat and may boost heart health according to WebMD Health News by Jennifer Warner and reviewed by Louise Chang, MD April 19, 2009.

Baking sugar free pie made with blueberries just may be one of the best choices of a healthy dessert to serve your guests. Who knew?

The new study shows rats who ate a diet rich in blueberries lost abdominal fat — the kind of fat linked to heart disease and diabetes — as well as experienced other health benefits like lowered cholesterol and improved glucose control even if their diet wasn’t otherwise heart-healthy.

“Some measurements were changed by blueberry even if the rats were on a high-fat diet,” researcher E. Mitchell Seymour, MS, of the University of Michigan’s Cardioprotection Research Laboratory, says in a news release.

Researchers say the results suggest that antioxidant-rich blueberries may change how the body stores and processes glucose or sugar for energy, thereby reducing the risk of both heart disease and diabetes. “The benefits of eating fruits and vegetables have been well researched, but our findings in regard to blueberries show the naturally occurring chemicals they contain, such as anthocyanins, show promise in mitigating these health conditions,” researcher Steven Bolling, MD, of the University of Michigan, says in the release.

Blueberries Boost Heart Health

In the study, presented at Experimental Biology 2009, researchers fed rats bred to become obese either a high-fat or low-fat diet enriched with whole blueberry powder or carbohydrates as 2% of their total diet. After 90 days, the rats fed blueberries had less abdominal fat, lower cholesterol, and improved glucose control and insulin sensitivity. The latter two factors are markers of how well the body processes sugar for energy and are related to diabetes risk.

These health benefits of blueberries were evident in rats fed both high- and low-fat diets enriched with the blueberry powder. But the benefits were greatest among those who ate a low-fat diet. In addition to the other heart health benefits of blueberries, those fed the low-fat blueberry diet also lost body weight and fat mass compared to those on the high-fat diet.

Although more research is needed to confirm these results in humans, a related study presented at the same conference showed that men with risk factors for heart disease who drank wild blueberry juice for three weeks seemed to experience slight improvements in glucose and insulin control.

Why Ultra Pure Water is Not Meant For Drinking

Ultra pure water is not meant for drinking purposes. The
problems with pure water of this nature, as it concerns
drinking, are numerous. When we talk about purity for drinking
purposes, we mean something different.

The purest sources for drinking are far underground. Some of the
natural aquifers and springs remain uncontaminated by synthetic
and organic chemicals that plague the world on the surface. Most
of us are not lucky enough to have access to one of these
aquifers.

Many of them have been bought up by bottling companies. Some of
them claim to offer ultra pure water. But, the problems with
pure water from a bottle are too numerous to even mention here.
Briefly, the bottles contaminate our environment, they
contaminate the liquids stored within, additional waters are
needed to create them and they may or may not contain something
that is safe to drink.

For most uses, our sources are surface waters, such as rivers,
lakes or man-made reservoirs. There are no uncontaminated
sources on the surface. We need a number of purification steps
to make it safe for consumption. They begin at the treatment
facilities and end in our homes, but ultra pure water is not
what we need.

Ultra pure water is designed for industrial applications, such
as semiconductors, ink jet formulations, printing and
lithography. It is similar to the distilled waters used for film
developing and reverse osmosis waters, used by a variety of
industries. At one time or another, all of these systems have
been adapted for home use, but the problems with pure water of
this nature remain.

Those groundwater sources that we mentioned above have a healthy
mineral content that helps us achieve proper hydration and
electrolyte balance. Surface waters also have a mineral content.

One of the problems with pure water obtained through RO or
distillation has to do with the human digestive system. It was
not designed to run on ultra pure water. Waters like that are
not naturally occurring anywhere in the world.

The digestive issues you could experience from drinking ultra
pure water include heart burn, acid reflux, diarrhea,
constipation, cramping and nausea. If you drank it, while
working outdoors on a hot summer day or participating in a
sport, you could suffer from hyper-hydration, which has symptoms
similar to dehydration. Water alone does not hydrate the body.

That’s why sports drinks are so popular, but they should not be
consumed on a regular basis either. They have too much sugar,
artificial colors and flavorings. The best choice for regular
consumption is water with a trace mineral or electrolyte
content.

The two most important electrolytes are sodium and potassium.
That’s one of the problems with pure water from distillers and
RO, they don’t contain those electrolytes.

If you are looking for something to drink, avoid the problems
with pure water, look for a home purifier that removes chemical
contaminants, cysts and heavy metals, while balancing
electrolytes. They are called “selective filtration devices”.
Leave ultra pure water for the industries to use.

Salba Fudge Nut Brownies

Ingredients

1 lb semi-sweet chocolate morsels
3/4 cup all purpose flour
1 cup butter
4 medium eggs
1 cup hazelnuts

Instructions
