Asparagus Pasta Salad

This great make-ahead asparagus recipe is a delicious time saver.

(Best when refrigerated several hours before serving.)

Ingredients:
8 oz. cracked black pepper fettuccine
1 lb. fresh asparagus, cut into 1″ pieces, cooked crisp tender
1/2 cup black olives, chopped
1 cup halved cherry tomatoes
3/4 cup chopped nuts, (I prefer pecans), divided
1 1/2 cups of fresh basil leaves
1/2 cup extra virgin olive oil
1/3 cup freshly grated Parmesan cheese
1/4 cup red wine vinegar
1 clove fresh garlic
salt and pepper to taste

Cook pasta according to package directions, then drain and rinse with cold water;drain again. Place in a shallow serving bowl and mix with 1-2 Tblsp. olive oil. Stir cooked,drained asparagus, halved tomatoes, olives and nuts into pasta. Make a dressing by combining remaining ingredients in a blender and blend until smooth. Pour into pasta mixture and gently toss to coat all ingredients. Refrigerate, covered, 4-5 hours before serving.

Creamy Beef Stroganoff

Beef recipes like Beef Stroganoff are comfort foods at their best.

Ingredients:
1 lb. lean top round beef
1/2 tsp garlic powder
1/4 tsp pepper
2 Tblsp olive oil
1/2 cup sliced mushrooms
1 medium onion, sliced

Sauce:
3 Tblsp flour
3 cups beef broth
2-3 Tblsp tomato paste
1/2 tsp oregano
1/2 tsp dill weed
1/2 tsp dry mustard
1-2 Tblsp cooking sherry
1/3 cup sour cream

If beef has any fat on it, remove it before beginning process. Slice beef into strips 2-3″ long. Season with garlic powder and pepper. Heat 2 Tblsp olive oil in skillet & saute mushrooms. Remove mushrooms from pan and saute onions. Remove onions and saute beef strips until browned.

To make sauce, add flour to oil remaining in skillet. Slowly add beef broth, stirring with a wisk until sauce is thickened. Blend in all the remaining ingredients, except sour cream. Add meat, mushrooms and onions to sauce in the skillet, and continue cooking over low heat for about 20 minutes. Stir occasionally. When you are ready to serve, stir in the sour cream. This is delicious served over freshly cooked pasta.

Sicilian Pasta with Ham

How to cook ham with that extra “something”.

Ingredients:
4 oz. can mushrooms, drained
1/2 cup olive oil
1/4 cup parsley flakes
1 1/2 tsp. garlic powder
1/2 cup flour
4 cups whipping cream
1 tsp. salt
1/4 tsp. pepper
2 cups cooked ham, diced
1 cup real bacon bits

Heat olive oil, then add mushrooms, parsley and garlic. Saute for five minutes, then add flour and blend well.

In a separate pan, heat whipping cream, salt and pepper till heated through. Combine the two mixtures, stirring constantly ’till thick and creamy. Do not boil.

Lastly, add the ham and bacon bits and mix well. Serve warm over cooked pasta.
