Here’s an easy peaches recipe for a delicious jam.

Ingredients:
2 quarts peaches
6 cups sugar
1/2 cup water

Peel peaches by first dunking them in boiling water for a few seconds. Carefully remove from the boiling water with a ladle, then run cold water over the peaches until cool enough to handle. Peach skin should remove easily. Remove pits, then crush peaches. Put peaches and water in cooking pot over medium low heat and cook for about 10 minutes. Add 6 cups of sugar and slowly bring mixture to a boil, stirring until sugar is completely dissolved. Once sugar is dissolved, you may turn the heat to med-med high until mixture thickens, or about 15 minutes, stirring to prevent it from sticking to the pot. While mixture is boiling hot, carefully pour into hot , sterilized jars, put sterilized lids on and process 10-15 minutes. Yield: 4 pints.

Want a little something sweet after dinner ? Try this quick and easy dessert. Fresh peaches are said to be a low-calorie source of  antioxidant vitamins. There are only thirty five calories in a medium size fruit. They are also high in fiber that aids in lowering high blood cholesterol. Canned peaches are higher in calories, about 110 in juice packed brands.

Ingredients:
2 peaches with skin removed, sliced
2 Tbls. brown sugar
2 Tbls. dry oatmeal
2 Tbls. all purpose flour
2 Tbls. chopped pecans
1 Tbls. real butter
1/4 tsp. cinnamon
1/4 tsp nutmeg

Put sliced peaches in microwaveable bowl. In a separate bowl, combine next five ingredients and mix until crumbly. Scatter over peaches, then sprinkle with cinnamon and nutmeg. Microwave, uncovered, on high for 5 minutes, or until peaches are tender. Serve while still warm. Add some whipped topping or ice cream, if desired.

Ingredients:
1 cup sliced peaches
1 cup plain nonfat yogurt
1/2 cup dry milk powder
1/2 cup club soda

Put peaches, yogurt and dry milk powder in a blender until smooth. Pour into three glasses and add club soda. Gently mix into peach mixture.

If you want to rim the glass, here are some good suggestions from chowhound.chow.com:

Idea #1. Use a sweet little orange, clementine, or mandarin…cut a tiny wedge, put a small, shallow slit in it, and rim the glass/plastic cup with it. I would suggest smushing/rolling the piece of fruit, prior to slicing so it give a bit more juice…just don’t make it super sloppy. As long as you’re not “mashing” your piece of fruit around the rim, it should be just fine.

Idea #2. I use two little plates, one with water in it (lime juice would be fine) and one with sugar in it, as he had. I dip the glass (upside down of course) straight into the liquid, then straight down into the sugar like he did, but then I give it a tiny twist because I like a lot of sugar on my glass, and that gets any extra spots.
