Cod is a white, mild-flavored, deep sea fish from the Artic waters. Besides having heart healthy Omega-3 fatty acids, it contains vitamins B12 and B6 and no carbs or fat. It can be prepared in minutes for a quick, healthy meal. Serve with a green vegetable for color, and for dessert, how about some sugar free pie? You’ll have a delicious, light meal and no regrets.

Ingredients:

6 oz. cod
3 shallots, peeled and chopped
1 clove garlic, minced
1 1/2 Tbls butter
4 cups milk, heated
lemon wedges
2 Tblsp green onion (optional)

Saute shallots and garlic in butter for about 2 minutes. Add hot milk to shallots, then add cod. Simmer 10 minutes on medium heat, turning cod over after 5 minutes. Place cod on a serving platter* and garnish with lemon wedges and green onion if desired. Yield: 4 servings.

*Note: For best results, warm the platter prior to placing food on it.

Shrimp Scampi

Ingredients:

1 tsp. butter
2 tsp. extra virgin olive oil
2-3 cloves garlic, minced
1 lb. shrimp
1/4 cup white wine
1 lemon, juiced
1/4 tsp. salt
1/4 tsp. pepper
dash of cayenne
parsley, chopped
cooked rice or pasta

Melt butter and olive oil together in a skillet. Add garlic and saute for about one minute. Add shrimp and saute for one more minute. Add wine, juice from the lemon, salt, pepper and cayenne; saute quickly while sauce begins to reduce and shrimp turns pink. Do not overcook.

Serve over cooked rice or your favorite pasta. Sprinkle with parsley and add lemon wedges as a garnish.
Yield: Serves 6.

Shrimp Ke-Bobs

Shrimp Ke-bobs are great appetizers for a party.

Ingredients:

Shrimp
yellow squash, cut in bite-sized pieces
zucchini, cut in bite-size pieces
red or green bell pepper, cut in bite-size pieces
cherry tomatoes

Thread each ingredient onto a metal skewer and repeat twice. Grill at low to medium temperature until done, making sure to turn as needed.
