This tasty appetizer makes good use of potato skins.
Ingredients:
6 large baking potatoes, baked
5 Tblsp. butter, melted
2 tsp. salt
1 1/2 – 2 tsp. garlic powder
1 tsp. lemon pepper
Once the potatoes are cooled, slice them lengthwise and scoop the insides out, leaving 1/4″-1/2″ shell, saving the pulp for another use. Slice each shell lengthwise then, using a pastry brush, apply the melted butter to the insides. Combine the salt, garlic powder and lemon pepper, then sprinkle over the buttered skins. Place seasoned skins on a broiler pan and broil until lightly browned, about 5-7 minutes.
Optional: You may add the following toppings to the serving area for your guests; sour cream, shredded cheddar cheese, bacon bits, chopped green onions.
Add your potato skins recipe – I’d love to try it!
